Yesterday was my four year blog anniversary! I say this every year, but I cannot believe I have been doing this for four years! Blogging is demanding and way more time consuming than most people can imagine. But, it has never been anything less than hugely satisfying and fun. Thank you all for your support and for reading It’s Droolworthy. I could not have done it without all of you.
Since I truly believe in celebrating whenever possible, I made this Smores Brownie Pie today. It is decadent beyond my wildest dreams, but who can resist any type of Smores? Not me! (See here and here) I saw this recipe on 600 Acres, but I cheated a little bit and used a boxed brownie mix. Truth be told, the brownie mix I used, is every bit as good as homemade brownies. If you fancy yourself a brownie aficionado, this Smores Brownie concoction will blow you away!

S’MORES PIE from 600 Acres
For the brownie layer (I used a box mix – sorry, not sorry!)
2/3 cup Dutch-processed cocoa
1 1/4 cup granulated sugar
1/2 cup confectioner’s sugar
1/2 teaspoon salt
1 cup all-purpose flour
1 teaspoon espresso powder (optional)
1 cup dark chocolate chips
3 eggs
1/2 cup melted butter
2 tablespoons water
For the topping
10 ounces mix of big and mini marshmallows
1 cup semisweet chocolate chips
1/2 cup crushed graham crackers
To make the brownie layer, preheat the oven to 350℉.
In a large bowl, whisk together the cocoa, sugars, salt, flour, and espresso powder.
Add the eggs, melted butter, and water. Mix well until the batter is smooth and shiny. Stir in the dark chocolate chips.
Pour the batter into a greased 9″ pie pan.
Bake for 40 minutes. Do not overbake, keep the oven on.
Remove from the oven. You can make the brownie layer ahead and keep it at room temperature for at least a day (or in the freezer for much longer).
Sprinkle the graham cracker crumbs over the top of the brownie layer. Sprinkle the semisweet chocolate chips evenly over the graham cracker crumbs. Top with the marshmallows.
Put pan in the preheated 350℉ oven for about 5 minutes, or until the chocolate chips just start to melt. Turn off the oven, and turn on the broiler. Leave under the broiler (watch it carefully) until the marshmallows just begin to brown.
Remove from the broiler and serve!
