I love fried zucchini. Actually, I love anything fried, but it doesn’t love me. I found this recipe for baked zucchini and it totally satisfied my need for something fried. It is also a huge crowd pleaser. Nobody could believe it wasn’t fried! Please make these and please let me know how much everyone loved it!
Baked Zucchini, recipe feeds 4 people, preheat oven to 400 degrees.
Ingredients:
3 zucchini cut in long circles
olive oil
panko bread crumbs
2 eggs or just egg whites are fine, too
flour
1. Cover a baking pan with foil, brush the bottom with olive oil. You only need a little here.
2. Slice zucchini into circles, but on an angle so that they are almost oval shaped.
3. Dip in flour, egg, then panko.
4. Place zucchini on baking pan close together. Bake at 400 degrees for approximately 30 minutes. They do not need to be turned. Depending on your oven, check at 25 minutes. Sometimes, I cook them longer to make them extra crispy. Serve with sea salt. Enjoy.
