We all know I’m no chef, but I do like good food. We eat salad every night and I make my own dressing, so it’s pretty good. But I’m definitely bored. Enter the grill. The grill can make most things go from ordinary to extraordinary. And, this arugula salad is most definitely extraordinary. This is not your everyday Arugula Salad. But neither is it a holiday Arugula Salad. Let’s call it a special Arugula Salad that you can make everyday.
I got the idea from How Sweet It Is. I put some corn and jarred peaches on the grill, about 3-4 minutes each side (the grill should be low to medium). Of course you have to cut the kernels off the corn – I do it in a bowl- it helps to catch the ones that want to fly away. I previously made this delicious dressing (see below), toss the arugula with dressing, place on platter, put corn and peaches artfully on arugula and you have your special Arugula Salad. p.s. If I can make this, anyone can.
Fresh Lime and Honey vinaigrette
(dressing also courtesy of How Sweet It Is)
1/4 cup red wine vinegar
4 tablespoons lime juice
1 1/2 tablespoons honey
2 garlic cloves, finely minced or pressed
1/4 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup extra virgin olive oil
