So radishes. I love them on buttered toast with a touch of salt. LOVE. But how often can I rationalize having radishes with bread and butter? Not too often. Roasted vegetables have been a long time favorite in our household, but only recently have we discovered roasted radishes. Not only are radishes very good for hair and skin but, because they are so colorful, they can elevate a humdrum weeknight dinner to a whole new level. At least they do in our house! I tossed them with a little olive oil and salad seasoning (salt, pepper, rosemary, chive and basil), put them on a tray lined with parchment paper and cooked them for 20-25 minutes in a 425 degree oven. Thanks Carrie- love them too – my favorite-sliced radishes on avocado toast…. A little less guilt inducing than bread and butter- but even better! top with a little maldon sea salt and cilantro if you like it-
