If you haven’t, you are most definitely missing out! Growing up in my family, we had icebox cake for every birthday celebration. I have carried on the tradition with my children and our youngest daughter turns 17 tomorrow. (Happy Birthday, Jordanna!) We celebrated her birthday this past weekend – that was all we could work out calendar-wise with our older daughters. What makes this cake so yummy is the Nabisco Famous Chocolate Wafer cookies get layered with whipped cream and the whipped cream softens the cookies into cake-like consistency. Not only is it yummy, it is exceptionally easy to make. Did I say easy? I meant to say it is the easiest cake you’ll ever make. It has 3 ingredients! Heavy cream, vanilla and Nabisco Famous Chocolate Wafers. The heavy cream gets whipped into soft peaks, stir in 1 teaspoon vanilla. Then, layer cookie, whipped cream, cookie, whipped cream until you’ve built a log, and then create the second log right next to it. The recipe is on the box of cookies just in case I haven’t been thorough enough with my directions. I strongly suggest making it the day before so the cookies get very soft- (extra droolworthy). Next time you have a celebration, make an iced box cake – maybe you’ll start a new tradition in your house?
