I cannot tell you how happy this makes me! The Oreo, the beloved cookie of maybe the entire world, has it’s own holiday. To commemorate this special day, I’ve made this very simple recipe with my cherished Oreos. If you enjoy Oreos as much as I do, these White Chocolate Oreo Peanut Butter cups take approximately 10 minutes to make and even less time to eat! Go ahead and celebrate! p.s. White Chocolate Oreo Peanut Butter Cups
Makes 6 peanut butter cups
12 ounces white chocolate chips
1/4 cup creamy peanut butter
1/4 cup confectioners sugar
2 Tablespoons unsalted butter, softened
8 Oreos
Line a standard sized muffin tin with six liners.
Melt half the chocolate (6 ounces) in the top half of a double boiler set over barely simmering water. Divide evenly among the liners, spreading on the bottoms. Put in the freezer to set.
While the white chocolate is setting, make the peanut butter filling: Beat the peanut butter, confectioners’ sugar and butter together until light and fluffy. Divide evenly among the tops of six of the Oreos (set aside the remaining two). Use a spoon or your clean fingers to press into a smooth and even layer.
When the chocolate has hardened, place one Oreo inside each liner – return to the freezer. Crush the remaining two Oreos and set aside.
Melt the remaining white chocolate in the double boiler. Spoon evenly atop the Oreo/peanut butter filling; rap the tin on the counter to level the surface. Sprinkle the tops with the reserved Oreo crumbs. Return to the refrigerator until your ready to celebrate!
