Sometimes, I get stuck in a rut for lunch and have the same thing for months on end. Lately, it’s been avocado and tomato on toast. Don’t get me wrong, I love my avocados, but it was time for a change. I am so happy I stumbled upon this recipe because I had it for lunch on Sunday and it was such a delightful change.
The best part, only five ingredients:
toast, make sure it’s some kind of great, whole grain bread
thinly sliced figs
ricotta or goat cheese (I used goat)
Toast the bread, spread cheese, assemble figs, drizzle honey and sprinkle with a little pepper. So yummy. Enjoy!
