I don’t believe I ever mentioned what an amazing cook my husband is. I do believe I have mentioned how I do not like to cook anymore, so out of necessity, my husband has stepped up to the plate. I am a lucky girl. Actually, my whole family is lucky because they love his cooking, too. One of my favorite dishes that Ron (said husband) makes is Eggplant Parmesan. He gives it such TLC that even with jarred sauce – it’s the best Eggplant Parmesan I’ve ever had. He created this Eggplant Parmesan with eggplant grilled on the bar-b-que, Jar Goods tomato sauce that is every bit as good as homemade and fresh mozarella.
Ingredients
** Grill mats are very helpful for this recipe**
2 or 3 eggplants, sliced approximately 1/4 inch thick
1 jar Jar Goods tomato sauce (worth every penny)
fresh mozzarella, sliced thinly – As much or as little as you need, depending on how many people you make it for.
olive oil
balsamic vinegar
2 garlic cloves, sliced thinly
1. Preheat grill
2. Brush sliced eggplant with olive oil and balsamic vinegar
3. Turn grill down to medium-low, and place eggplant down on grill mat or grill surface, cook for about 10 minutes per side. Be careful not to burn.
4. Add sliced garlic to Jar Goods sauce, heat in a saucepan on medium until hot. Stir occasionally.
5. When eggplant is cooked through, spoon sauce on a slice, layer some mozzarella and repeat. Do not overdo sauce or mozzarella or you’ll never get it off the grill. Enjoy!
