Fall is definitely my favorite time of year. I love the temperature outside. It’s clean and crisp. My birthday is in October. My favorite holiday, Thanksgiving, is in November and Honeycrisp apples are available. Need I say more? I made this apple cake this week when I was having trouble with my computer and I didn’t have the cables I needed to do something. I was frustrated. My frustration came to an end when I realized I had everything in the house I needed to make this cake. Since it only has 9 ingredients, you probably have everything in your pantry, too. This apple cake makes me happy. And usually other people happy, too.
Apple Cake
Preheat oven to 350 degrees.
Grease and flour a 10 inch tube pan
Ingredients
4 eggs
5-6 apples, peeled and sliced, Winesap or Honeycrisp
1 cup oil
1/3 cup orange juice
2 1/2 teaspoons vanilla
2 cups of sugar, 1/2 cup additional needed separately
3 cups of flour, sifted
3 teaspoons baking powder
2 teaspoons cinnamon
Mix eggs, oil, OJ, sugar and vanilla. Add 3 cups sifted flour and 3 teaspoons baking powder. Peel and slice apples, mix with additional 1/2 cup sugar and the cinnamon. Pour in layer of batter, then layer of apples. Repeat once. Bake for 1 hour and 15 minutes or longer. Test with knife in center, finished when knife comes out clean.

This looks perfect for Rosh Hashanah! I was just going through my recipes this morning looking for a holiday dessert other than the traditional honey cake.
Yummy!! and you won’t believe this!! My mom taught me how to bake this cake when I was a little girl. We have the exact recipe!! Believe it or not a Mexican woman who worked for my dad, gave it to us. She called it “German” Apple Cake!! You’ve inspired me to make it tomorrow!! Yippee for Apple Cake and Autumn! It’s the light and shadows the freshness in the air…..makes my heart dance!
