This Cauliflower Radish salad is as delicious as it is pretty! I found this on Add 1 TBSP – although they call it a Shaved Cauliflower and Walnut Salad.  Whatever you want to call it, I think it’s a great summer salad. What I loved most about it were all the different flavors unusually co-existing beautifully on one plate! Best of all, everything is raw – nothing had to be cooked. Game changer if you ask me!

Cauliflower and Radish Salad

  • 1/2 head of cauliflower – cored and cut into florets
  • 2 stalks celery  – trimmed
  • 3 radishes
  • 1/2 small green apple
  • 1/4 small red onion
  • 3 TBSP flat-leaf parsley leaves – finely chopped
  • 1/2 cup walnuts
  • sea salt and  pepper to taste
  • Lemon Vinaigrette

  • 2 teaspoons Dijon mustard
  • zest of 1 lemon
  • 2 TBSP lemon juice
  • 1/4 cup walnut oil
  • Kosher salt and freshly cracked pepper
  • First, make the dressing: zest the lemon into a small bowl. Then squeeze the lemon and add the juice. Whisk in the Dijon mustard. Gradually whisk in the oil. Season to taste with salt and pepper.

    Next, assemble the salad: peel the rounded side of the celery to remove the strings. Then, thinly slice the cauliflower, celery, radish, and onion into 1/8-inch thick slices with a food processor with a slicing blade. Next, slice the apple into 1/8-inch slices and toss all the ingredients together in a large bowl with the parsley.

    Finally, drizzle in the dressing and crumble the walnuts as you sprinkle them over the salad. Season with salt and pepper before serving.
