This recipe, courtesy of my friend Debbie and her daughter Dana’s mother-in-law (thank you, Debbie, and please make sure to thank Dana’s mother-in-law) is so easy and quite possibly the best biscotti I’ve ever had. It has 7 ingredients that are always on hand in your pantry. Then, you add whatever nuts and/or dried fruit you have in the house.* Enjoy~!
*Suggestions – walnuts, pistachios, hazelnuts, raisins, dried cranberries, you get the idea

Ingredients

  • 1 1/2 cup sugar
  • 1 stick unsalted, room temperature butter
  • 2 eggs
  • 1/2 teaspoon almond extract (I used vanilla extract)
    then, whisk together:

  • 2 1/2 cups flour
  • 1 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • Add above to butter/sugar mixture

    Add 1 1/2 cups dried cranberries and 6 oz. white chocolate chips

    Blend well, divide into 2 balls and form each into a log approximately 14″ X 2″ long. Place on parchment lined baking sheet. Bake at 350 degrees for 35 minutes. Remove from oven and let cool for 15 minutes. Place on cutting board and slice diagonally into 1″ slices. Place back on baking sheet (I place mine on a wire rack on the baking sheet which makes them extra crunchy and hard) and cook for 7 more minutes. Enjoy!
