I roasted radishes !

So radishes. I love them on buttered toast with a touch of salt. LOVE. But how often can I rationalize having radishes with bread and butter? Not too often. Roasted vegetables have been a long time favorite in our household, but only recently have we discovered roasted radishes. Not only are radishes very good for hair and skin [1] but, because they are so colorful, they can elevate a humdrum weeknight dinner to a whole new level. At least they do in our house! I tossed them with a little olive oil and salad seasoning (salt, pepper, rosemary, chive and basil), put them on a tray lined with parchment paper and cooked them for 20-25 minutes in a 425 degree oven.
